    How about a really nice pasta dish with a tomatoes and Aubergine sauce or something similar. If you add a nice salad, some garlic bread and white wine then it should go down well as a summer lunch. by cofacio

    delia smith's roast vegetable cous cous is a good option. It contains feta cheese so no cows milk but would actually be fine without the cheese anyway. Recipe on waitrose website. by Sarson

    Courgettes and tomatoes are in season at the moment so I would make a sort of ratatouille dish, could have an optional grated cheese garnish. Similarly cook the veg up as a pasta sauce with extra tomatoes or tomato puree and add some beans too if you have them in season. by Anytar

    Lots of Asian/middle eastern dishes are dairy free. Not always easy to find veggie options but... Thai salad (with mango and tofu), stuffed peppers, roast veg, possibly some kind of pumpkin soup? by Shut up and listen

    Thanks for the great ideas. It all sounds lovely, but I think I'm going for ratatouille with home made bread, and beans on toast for the husband (only joking, beans for my children) by soosy
